Don't use store bought icing!

Ever wonder how chefs made cakes that looked like this?

So delicate looking on the outside, mellow, calm, tranquil, elegant. I recently came upon a recipe that I would love to try soon enough that now allows you to ice your cake like professionals. The icing is called Royal Icing and it favored because of its hard, matte finish that can be manipulated, in terms of colors, very easily.

Royal Icing Using Egg Whites:

2 large egg whites

2 teaspoons fresh lemon juice

3 cups (330 grams) confectioners (powdered or icing) sugar, sifted

For Royal Icing with Egg Whites: In the bowl of your electric mixer (or with a hand mixer), beat the egg whites with the lemon juice. Add the sifted powdered sugar and beat on low speed until combined and smooth. The icing needs to be used immediately or transferred to an airtight container as royal icing hardens when exposed to air. Cover with plastic wrap when not in use.


Royal Icing Using Meringue Powder:

4 cups (440 grams) confectioners' (powdered or icing) sugar

3 tablespoons (30 grams) meringue powder

1/2 teaspoon extract (vanilla, lemon, almond)

1/2 - 3/4 cup (120 - 180 ml) warm water

For Royal Icing with Meringue Powder: In the bowl of your electric mixer (or with a hand mixer), beat the confectioners' sugar and meringue powder until combined. Add the water and beat on medium to high speed until very glossy and stiff peaks form (5 to 7 minutes). If necessary, to get the right consistency, add more powdered sugar or water. To cover or 'flood' the entire surface of the cookie with icing, the proper consistency is when you lift the beater, the ribbon of icing that falls back into the bowl remains on the surface of the icing for a few seconds before disappearing.

The icing needs to be used immediately or transferred to an airtight container as royal icing hardens when exposed to air. Cover with plastic wrap when not in use.

Makes about 3 cups

Marshmallows and Hot Cocoa, what a thought

This post just made my mouth water... I don't know why though. Perhaps it's thoughts of having homemade marshmallows floating in warm hot cocoa, simply chilling in my apartment.

Homemade Marshmallows

.75-oz unflavored gelatin (3 envelopes of Knox gelatin)
1/2 cup cold water
2 cups granulated sugar
2/3 cups light corn syrup
1/4 cup water
1/4 teaspoon salt
1 tablespoon vanilla extract

Line 9 x 9-inch pan with plastic wrap and lightly oil it. Set aside.

In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Soak for about 10 minutes.

Meanwhile, combine sugar, corn syrup and 1/4 cup water in a small saucepan. Bring the mixture to a rapid boil and boil hard for 1 minute.

Pour the boiling syrup into soaked gelatin and turn on the mixer, using the whisk attachment, to high speed. Add the salt and beat for 12 minutes. After 12 minutes, add in the vanilla extract beat to incorporate.

Scrape marshmallow into the prepared pan and spread evenly (Lightly greasing your hands and the spatula helps a lot here). Take another piece of lightly oiled plastic wrap and press lightly on top of the marshmallow, creating a seal. Let mixture sit for a few hours, or overnight, until cooled and firmly set.

In a shallow dish, combine equal parts cornstarch and confectioners’ sugar. Remove marshmallow from pan and cut into equal pieces with scissors (the best tool for the job) or a chef’s knife. Dredge each piece of marshmallow in confectioners’ sugar mixture.
Store in an airtight container.

 

Jell-O + Condensed Milk = Amazing

Speaking of Jell-O, I'm in love with this Hawai'ian layered Jell-O thing that was offered from time to time at a local Japanese market. It's so cute and good.

I recently came upon on the recipe I had been looking for. I look forward to making it when I get back... hehehe, and who knows, maybe even combining this recipe with some of the last ones.

I still intend on going to Bartending school. Not exactly when, but there is something really interesting to me about mixology.

Not surprsingly, this site about cool ways to spice up your newest party is pretty interesting. Luge? Champagne Pyramid? Test Tube Shots? It's almost too much :P

Thinking about Carlo, right now, here is something he would be proud of although I don't know if he would approve of the formula... Sangria

I sooo want to cozy up with cool friends in the winter with this warm, fruity, and spicy shot.

Last but not least, people complained about my last Jell-O shots suggesting that they were too strong. I say too bad, but for those asking for a little more flavor and, perhaps, less impact, this site is really cool. I love the cocktail shots.

Tried
-Kimchee! It's soo much better when you know you've made it. It's also kind of cool seeing the fermentation take place.
-Peanut Sauce. It's pretty good. Now I just need to figure out how to make spring rolls nicely to compliment the sauce. Hmmm, that doesn't sound right at all.

Yet to Try
-Pumpkin Shrimp Gyoza with Roasted Red Chili Sauce. I think I'm more intriguing by the Pumpkin part of it.
-Apple and Aged Cheddar Grilled Cheese. Mmmmm, sounds exciting. Here are other sandwiches that look equally great too!
-Soft drinks. Don't like them but I know some people do.
-
Kālua Pig and Cabbage. I love Kalua Pig. Here are other great looking Hawai'ian recipes as well.
-Cheesecake Factory Pumpkin Cheesecake. I love Cheesecake!
-Best Chocolate Cupcake. I'm down to try this. Looks really cute too.
-No Knead Bread. Always wanted to make bread and this seems like and easy enough way of doing it.
-Puff the Magic Pancake. Looks kind of ugly, but interesting at the same time. Again this is something that I would be down to try.

Roasted Garlic Twice-Baked Potatoes

Roasted Garlic Twice-Baked Potatoes

Prep Time:

Makes:
8 servings, one stuffed potato piece each
1 head garlic
1 tsp. oil
4 large baking potatoes (2-1/2 lb.)
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up, divided
1/4 cup KRAFT 100% Grated Parmesan Cheese
4 slices OSCAR MAYER Bacon, crisply cooked, drained and crumbled

PREHEAT oven to 400°F. Cut thin slice off top of garlic head to expose cloves; discard top. Place garlic head on square sheet of foil; drizzle with oil. Wrap garlic loosely with foil. Prick potatoes in several places with fork. Bake potatoes and garlic 1 hour.

REDUCE oven temperature to 350ºF. Cut small slice off both ends of each potato. Cut potatoes crosswise in half. Scoop out centers, leaving 1/8-inch-thick shells. Place potato flesh in medium bowl; mash. Squeeze garlic out of papery shell into bowl with potatoes. Add sour cream, three-fourths of the VELVEETA and the Parmesan cheese; beat until fluffy. Spoon evenly into shells, mounding filling as necessary to use all the filling; place in shallow baking dish.

BAKE 30 min.; top with remaining VELVEETA. Bake an additional 5 min. or until VELVEETA is melted. Sprinkle with bacon.

These commonly used equivalent measures will simplify your recipe preparation.

                 3 teaspoons = 1 tablespoon
4 tablespooons = 1/4 cup
5 tablespoons + 1 teaspoon = 1/3 cup
16 tablespoons = 1 cup
2 cups = 1 pint
2 pints = 1 quart

• Butter

  1/2 ounce (1/8 stick) = 1 tablespoon
1 ounce (1/4 stick) = 2 tablespoons
2 ounces (1/2 stick) = 4 tablespoons
4 ounces (1 stick) = 1/2 cup
16 ounces (4 sticks) = 2 cups

• Chocolate
